17. Deli Pockets


Are you looking for a quick lunch? Threw these together today and the kids loved them! A deli sandwich with a twist!


Ingredients

  • Flour Tortillas

  • Deli Meat and cheese (of your choice)

  • Butter

  • Any additions of your choosing (Onions and peppers are my go to)


That's all! Super simple. And, super quick. I made these on a griddle so I could make 3-4 at a time. It took about 7-8 minutes to make. 2-3 minutes of prep and 5 minutes on the griddle.


 

Lets Cook!


Step 1: Layer the meat, cheese, and any toppings flat on the tortilla.



Step 2: Warm the griddle/pan with butter. Fold the sides and then the top and bottom.




Step 3: Lay the pocket (folds facing down) on the griddle and let it simmer in the butter for about 2 minutes. Then flip and cook for about another 2 minutes




Step 4: Eat!




Short post but it's a short and quick meal. I'm adding it to our lunch rotation to get us through the weekdays now that we're schooling at home. I kept it simple with turkey, ham, and cheese because they were for the kids and I served them with ranch. You could definitely spice it up though with other additions like onions and peppers.
