25. Sausage and Peppers with Sautéed Green Beans

This is one of my go to low carb meals. Quick, easy, and delicious!


Sausage and Peppers

 

Ingredients

  1. 2 packs of Hillshire Farm Polska Kielbasa

  2. One Large Yellow Onion

  3. 2 Green Bell Peppers

  4. 1 Pack of Mixed Sweet Peppers (Individual Peppers can work just as well: 1 red, 1 yellow, 1 orange)

  5. Olive Oil


Recipe

  1. Slice the sausage in half and then into 1/4 inch slices (Can be sliced however you like. Some people prefer whole slices and some like them diced.)

  2. Add 3tbsps of olive oil to a pan and once heated add the sausage. Cook for 5-10 minutes over medium heat (until desired level of fry on the outside), stirring occasionally

  3. While the sausage cooks, cut onion into 1/2 inch slices (or cut into desired size)

  4. Once sausage is cooked, stir in the onions. Sautee for an additional 5 minutes (until onions are nearly translucent) stirring occasionally.

  5. While the sausage and onions cook, slice mini peppers (or coarsely cut whole sweet peppers) omitting the tops and seeds.

  6. Stir the peppers into the sausage and onion mix. Sautee for an additional 5-10 minutes (until peppers are desired consistency. I prefer mine to hold a little crunch but you can cook until a little softer)

  7. Remove from heat and serve!



Sautéed Green Beans

 

Ingredients


1. 3lbs of Fresh Green Beans

2. Olive Oil

3. Garlic

5. 1 Large Yellow Onion

6. Salt (I prefer Pink Himalayan Salt, But any salt will do. Including Garlic Salt if you don't have garlic cloves on hand)


Recipe


  1. Cut ends from green beans and discard the ends.

  2. Coarsely chop the onion and then mince (press) 4 cloves of garlic.

  3. Add 3tbsp of olive oil to the pan on medium heat. Once hot, add onions and garlic to the pan. Sautee for 3-5 minutes until the mix is fragrant.

  4. Add the green beans to the pan and reduce heat to medium low. Sautee covered, stirring frequently for 10-15 minutes (until green beans are your desired texture, softer vs maintaining a crunch).

  5. Season to your liking and stir (Salt, Garlic Salt, Garlic Powder, Onion Powder, Black Pepper are some suggestions).

  6. Remove from heat and serve.


Suggestions


1. If you're not doing low carb this meal is excellent served over rice. I love it with yellow rice or white rice.


2. If you're not doing low carb, another suggestion is serving with pita pockets. Green Beans can be cut into smaller pieces before cooking and then once everything is cooked, mix it all together. This can then be stuffed into a pita pocket. Its a family favorite here.


3. If you're not concerned about carbs at all, mix with rice and then stuff into a pita pocket! Delicious!


4. A suggestion for low carb is using the leftovers for breakfast the next day served with scrambled eggs and cheese!
