27. Low Carb Instapot Chicken Taco Boats



Dieting can be delicious when you get to celebrate Tuesday's with tasty tacos! Keep reading for this super simple low carb chicken taco recipe.


Ingredients

  1. 1.5-2lbs of Boneless Skinless Chicken Thighs (About 5 thighs, thawed)

  2. 1 Packet of Taco Seasoning

  3. 1 cup of salsa

  4. 1tbsp of Cilantro (optional, more or less as desired)

  5. Romaine Hearts

Recipe

  1. Add one cup of salsa to the instapot.

  2. Top with about half of the taco seasoning and the cilantro if desired. Stir.

  3. Add the chicken thighs to the instapot on top of the salsa mix.

  4. Add the remaining taco seasoning over the chicken.

  5. Place the top on the instapot with the valve sealed and pressure cook for 12 minutes.

  6. While the chicken is cooking cut the base (the white part) from the bottom of the hearts and separate the leaves. These will be the taco shells.

  7. Natural release for 5 minutes and then quick release.

  8. Using tongs, shred the chicken.

  9. Fill the romaine heart leave with the taco chicken mix.

  10. Add desired taco toppings

For our tacos, I spread the sour cream on the inside bottom of the lettuce boat and then topped with the chicken. I added cheese to the chicken and them topped it off with bacon.
